Chinese Minute Chicken

Ingredients
3lbs chicken thighs, boned and cubed
4 tbsp cornstarch
1/4C vegetable oil
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp minced fresh ginger
1/4 tsp salt
1/4 tsp pepper
2 tbsp sherry

Sauce
1/2 C water
1 tbsp cornstarch
1 1/2 tbsp brown sugar
2 tbsp oyster sauce

1/2 C chopped green onions
1/2 C chopped chinese persley

Directions
  1. Coat chicken with corn starch
  2. Heal oil and saute garlic and ginger until brown
  3. Stir-fry chicken on high heat, sprinkling with salt, pepper and sherry until chicken is browned
  4. Reduce heat to medium
  5. For the sauce: Dissolve cornstarch into water.  Add sugar and oyster sauce, combining well. 
  6. Add green onion and parsley
  7. Serve on lettuce leaves
