Pad Thai Popcorn
Directions
- Pop popcorn
- Transfer to a large bowl with spider (or hands) to avoid unpopped kernels
- Add in 1 cup finely drooped peanuts
- Zest a lime
- Sauce
- 1/2 C brown sugar, 1/4C vegetable oil, 1/4C corn syrup, squeeze in juice of half a lime, 1.5 tbspasian fish sauce put heat on medium. Bring to boil and boil for 5 minutes. Turn off the heat
- Add in sambal/chili peppers, lime zest. BE READY, add baking soda stir, add sauce to popcorn & STIR STIR STIR
- Add to lined baking sheet (silipat). 250 degree oven for 45 minutes, toss every 15 minutes with spatula.

J liked them, I thought they were okay. I'd prefer not to make it again and instead try caramel popcorn.
