White Beans and Sausage

Ingredients

  • 1 lb of Cannellini beans, dried (I used great northern beans)
  • 1.5 lb sweet italian sausage (I used habanero cheese sausage)
  • 2 cloves of garlic
  • 1 can of tomatoes, sliced
  • 1 pinch of red pepper flake
Directions
  • Preheat the oven to 250 degree.  Pour beans into a dutch oven and remove any rocks.  Cover with 4 cups of chicken stock.  Bring the pot to a boil then cook in the oven for 75 minutes.
  • Slice or dice the sausage then brown.  Add garlic, onions, tomatoes, and a pinch of red pepper flakes.
  • Add 1/2 cup of stock from the pot and then stir in beans
