Typical Mauritian Potato Salad

Serves 5

Ingredients

* 2 medium size beetroots
* 3 big carrots
* 3 big potatoes
* 3 large eggs
* 1 onion finely sliced and lightly salted. (Wash salt out after 5 mins. and squeeze)
* 1 to 2 TB vinegar
* 5 to 6 TB oil
* salt
* ¼ tsp freshly ground pepper

Directions

1. Boil potatoes, carrots, beetroots and eggs covered with salted water until vegetables are just cooked and eggs are hard-boiled. Run cold water over the vegetables to cool faster. Drain.
2. Scoop out 2 egg yolks and reserve for the vinaigrette.
3. Peel and cut all (including eggs) into thin slices. Place in a large bowl.
4. In a separate bowl, mix oil, vinegar, salt and pepper. Mash eggs yolks into the vinaigrette. Mix in chopped onions
5. Toss the potatoes/vegetables with the vinaigrette.

Omit carrots and beetroots. Just use half of the vinaigrette oil/vinegar and onion. Use 2 to 3 eggs. Adjust the vinaigrette to your taste.

Comments:
I added diced celery which was good. It lacked tang, so I added in more vinagrette - next time I'll double or triple it. Also, I will leave out the eggs, like other classic french potato recipes ( Ina Garten, Cooks, Bon Apetit)
