Cocoa Brownies (Alton Brown)

Cocoa Brownies Recipe : Alton Brown : Food Network




Ingredients
  • Soft butter, for greasing the pan
  • Flour, for dusting the buttered pan
  • 4 large eggs
  • 1 cup sugar, sifted
  • 1 cup brown sugar, sifted
  • 1 cup (8 ounces) melted butter
  • 1 and 1/4 cups cocoa, sifted
  • 2 teaspoons vanilla extract
  • 1/2 cup flour, sifted
  • 1/2 teaspoon kosher salt

Directions
Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

  1. In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow.
  2. Flip to low speed
  3. Sift and add both sugars, flour, salt, and cocoa powder
  4. Add the vanilla
  5. SLOWLY add the melted butter as you mix slowly
  6. Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. 
  7. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come with a little bit of crumb so it's moist. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.
Notes
Cutting with a butter knife crushed the top of the brownie.  I'll wait till the brownies are mostly cool next time!
The taste was good, very chocolaty and yummy.  I made them for him on valentines and he liked them a lot.
