Cheddar Chicken
Ingredients
Based off of Parmesan Chicken Recipe | Simply Recipes
- 2 lbs Chicken breast, boneless & skinless
- Pam
- 1/8C of canola oil
- 2/3C Cheddar cheese (sharp, grated)
- Panko
- Salt
- Garlic powder
- Thyme
- Basil
- Paprika
- Cast Iron Pan
- Pre-heat the oven to 450 degrees and stick the cast iron pan in there so it gets hot
- Cut the chicken into medallions
- Spray with pam or coat with canola oil (I coated it originally)
- Season with salt, garlic powder, thyme, basil, paprika, etc
- Coat with a mixture of cheddar cheese and panko bread crumbs
- Coat the bottom of the cast iron pan with a thin layer of canola oil and place the chicken in
- Put the pan into the oven for 10 minutes
- Take the pan out and place over high heat while you flip the chicken over to brown the other side (about 2 minutes)
