Cheddar Chicken

Ingredients
  • 2 lbs Chicken breast, boneless & skinless
  • Pam
  • 1/8C of canola oil
  • 2/3C Cheddar cheese (sharp, grated)
  • Panko
  • Salt
  • Garlic powder
  • Thyme
  • Basil
  • Paprika
  • Cast Iron Pan
Instructions
  1. Pre-heat the oven to 450 degrees and stick the cast iron pan in there so it gets hot
  2. Cut the chicken into medallions
  3. Spray with pam or coat with canola oil (I coated it originally)
  4. Season with salt, garlic powder, thyme, basil, paprika, etc
  5. Coat with a mixture of cheddar cheese and panko bread crumbs
  6. Coat the bottom of the cast iron pan with a thin layer of canola oil and place the chicken in
  7. Put the pan into the oven for 10 minutes
  8. Take the pan out and place over high heat while you flip the chicken over to brown the other side (about 2 minutes)
Notes: I liked it.  It was very crunchy!  I'll definately use sharp cheddar next time and try to have it grated instead of shredded.
