Fried Rice

Sauce
  • 2 Tbsp. oyster sauce
  • 1 Tbsp. light soy sauce
  • 1 Tbsp hon dashi
  • 1 Tbsp. sesame oil
  • 1 tsp. sugar (optional)
Rice
  • 3 cups cooked day old rice, spread out on a pan and refrigerated overnight
  • Peanut oil
  • 3 eggs, beaten with 1/4 tsp. kosher salt
  • 4 slices of bacon
  • 1 portuguese sausage (about a 1/2 C), diced
  • 1 can of spam, diced (optional)
  • 5 scallions, thinly sliced diagonally
  • 1 onion, sliced
  • 1lb carrots, julienned
  • 1lb bean sprouts
  • 1lb snow peas (optional)

Directions

  1. Combine 3 Tbsp oyster sauce, 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp hon dashi and 1 tsp sugar in a small bowl; set sauce aside.
  2. Heat a wok over high heat until hot. Add 1 tsp of peanut oil and stir fry carrots. Set aside.
  3. Over high heat, stir fry onions and other vegetables in batches with peanut oil. Set aside.
  4. Over medium heat, add 1 tbsp. oil and swirl to coat cooking surface. When oil begins to smoke slightly, add the eggs and stir vigorously to scramble until eggs are medium firm, about 1 1/2 minutes. Transfer eggs to a plate and cut into small pieces; set aside.
  5. Over medium high heat cook the portuguese sausage (no oil) and stir-fry for 1 minute. Transfer to a plate and return the wok to the heat. 
  6. Over medium heat cook the bacon (no oil). Transfer bacon to a plate and drain all but 1 Tbsp of bacon grease out of the wok.
  7. Put rice into a bowl and break up any clumps. Heat wok to over high heat until hot. Add remaining 2 tbsp. oil to pan, swirl to coat, and add the rice about 1 cup at a time, using a spatula to spread it into an even layer. Cook over high heat for 2 minutes, stirring to break apart clumps. Add reserved sauce and stir-fry until rice is coated with sauce, about 1 minute. 
  8. Mix in everything else including scallions and cook for 1 minute. Transfer fried rice to a warm platter to serve.

This is the good fried rice! The hon dashi and bacon give it a depth of flavor that is missing from normal fried rice, delicious. I didn't use sugar the last time I made this.
