Buttermilk Pancakes from Alton Brown

Ingredients
  • 1 eggs, separated
  • 1 cup buttermilk
  • 2 tablespoons (28.3g) melted butter 
  • 1/2 stick butter, for greasing the pan
  • 1 cups fresh fruit such as blueberries, if desired
  • 1 cups "Instant" Pancake Mix, recipe below
  • 3 cups (375g) all-purpose flour
  • 3/4 teaspoons baking soda (4g) (check expiration date first)
  • 1 1/2 (7g) teaspoons baking powder
  • 1/2 (3g) tablespoon kosher salt
  • 1 (14g) tablespoons sugar
Directions
  1. Pre-heat oven to 200 degrees F 
  2. Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
  3. Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. 
  4.  Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
  5. Make ze pancakes and hold in oven till ready to serve
