Buttermilk Pancakes from Alton Brown

Ingredients
- 1 eggs, separated
- 1 cup buttermilk
- 2 tablespoons (28.3g) melted butter
- 1/2 stick butter, for greasing the pan
- 1 cups fresh fruit such as blueberries, if desired
- 1 cups "Instant" Pancake Mix, recipe below
- 3 cups (375g) all-purpose flour
- 3/4 teaspoons baking soda (4g) (check expiration date first)
- 1 1/2 (7g) teaspoons baking powder
- 1/2 (3g) tablespoon kosher salt
- 1 (14g) tablespoons sugar
- Pre-heat oven to 200 degrees F
- Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
- Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix.
- Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
- Make ze pancakes and hold in oven till ready to serve
