Corn Chowder
Ingredients
1/4lb bacon, diced
1 onion, diced
1 celery, diced
1lb carrots, diced
2.5lbs potatoes, in 1" cubes
2 C milk
1 17oz can cream style corn
2 17oz can whole kernel corn
1C sharp cheddar cheese
1C of chicken broth
1 package country style gravy (optional)
Directions
1/4lb bacon, diced
1 onion, diced
1 celery, diced
1lb carrots, diced
2.5lbs potatoes, in 1" cubes
2 C milk
1 17oz can cream style corn
2 17oz can whole kernel corn
1C sharp cheddar cheese
1C of chicken broth
1 package country style gravy (optional)
Directions
- Brown the onions and set aside
- Brown the bacon over medium heat and scoop out extra grease.
- Place carrots & potatoes into pot. Salt and cover with enough chicken stock to barely cover. Simmer for 20-25 min, stirring occasionally (5 min on high pressure) .
- Add in the celery, simmer for 10 minutes
- Heat up the milk in the microwave till hot
- Stir in the corn and onions.
- If using the gravy mix, stir it in with the milk and add to the pot.
- Add cheese and serve.
