Corn Chowder

Ingredients
1/4lb bacon, diced
1 onion, diced
1 celery, diced
1lb carrots, diced
2.5lbs potatoes, in 1" cubes
2 C milk
1 17oz can cream style corn
2 17oz can whole kernel corn
1C sharp cheddar cheese
1C of chicken broth
1 package country style gravy (optional)


Directions
  1. Brown the onions and set aside
  2. Brown the bacon over medium heat and scoop out extra grease.
  3. Place carrots & potatoes into pot.  Salt and cover with enough chicken stock to barely cover.  Simmer for 20-25 min, stirring occasionally (5 min on high pressure) . 
  4. Add in the celery, simmer for 10 minutes
  5. Heat up the milk in the microwave till hot
  6. Stir in the corn and onions.
  7. If using the gravy mix, stir it in with the milk and add to the pot.
  8. Add cheese and serve.
