2 750ml bottles of Ever Clear (pure grain alcohol)
The zest of 17 organic lemons
3.5 cups of white sugar (703.5g)

The zest of 17 organic lemons
3.5 cups of white sugar (703.5g)

Directions
- Clean and dry lemons. Zest (avoid getting any of the white, bitter pith)
- Combine zest and alcohol into a 1 gallon jar. Store for 45 days (or longer) at room temperature.
- Heat 5 cups of water and 3.5 cups of sugar in a sauce pan on high until the sugar has completely dissolved. Let completely cool.
- After the simple syrup is cool, add it to the jar and shake to combine. Store for another 45 days at room temperature.
- Using a strainer (and possibly multiple layers of cheesecloth or disposable coffee filters) and funnel and filter the limoncello into a bottle.
- Store in a freezer for up to a year.
