Asparagus with Carmelized Onions

Ingredients
Asparagus
Onions
Canola oil
1 Tbsp sugar
1 Tbsp rice vinegar

Directions
  1. Prep the asparagus by chopping off 1" from the bottom of the stem.  Optionally peel part of the stem if it's hard
  2. Blanch the asparagus for 2-3 minutes and move into ice water.
  3. Carmelize the onions, throwing in 1 Tbsp of sugar. 
  4. After around 20-30 seconds, add in 1 Tbsp rice vinegar. Saute for a bit. 
  5. Add in the blanched asparagus and saute for a bit. Cover for 30s-1 minute until the asparagus heats up. 
  6. Salt & serve
