Directions
- Prep the asparagus by chopping off 1" from the bottom of the stem. Optionally peel part of the stem if it's hard
- Blanch the asparagus for 2-3 minutes and move into ice water.
- Carmelize the onions, throwing in 1 Tbsp of sugar.
- After around 20-30 seconds, add in 1 Tbsp rice vinegar. Saute for a bit.
- Add in the blanched asparagus and saute for a bit. Cover for 30s-1 minute until the asparagus heats up.
- Salt & serve
