Fried Noodles

Ingredients
  • 16oz fresh Egg Noodles (1 package)
  • 1 can of spam, cubed to 1/4"
  • 1 lb carrots, julienned
  • 16oz Bean sprouts
  • 5 eggs, scrambled
  • 8 green onions, sliced in half lengthwise then cut into 1 inch lengths
  • 3 Tbsp peanut oil
  • 6 cloves garlic, minced
  • 2 Tbsp oyster sauce
  • 3 Tbsp shoyu
  • 1 tsp dashi
  • 1 tsp sesame oil
  • 6 slices ginger, minced (optional)
  • 14oz Chinese Sausage (Lap cheong), sliced (optional)
Directions
  1. Boil a large pot of water to cook the noodles in
  2. Prep the onions, carrots and green onions
  3. Stir fry the onion over high heat until softened with peanut oil
  4. Stir fry the spam until browned over medium high heat
  5. Stir fry the chinese sausage with about a 1/4 cup of water and set aside
  6. Stir fry the bean sprouts over high heat with peanut oil until limp but still crunchy and set aside.
  7. Stir fry the garlic, ginger, and carrots in the peanut oil over high heat. Set aside
  8. Cook the eggs over medium low heat like a pancake.
  9. Boil the noodles until done, drain, then toss with a little bit of sesame oil.
  10. Mix the 1 Tbsp shoyu, 2 Tbsp oyster sauce, 1 tsp dashi in a small bowl
  11. Working in 2 batches so there isn't too many noodles in the pan,over high heat, add 1-2Tbsp of peanut oil then add the noodles and sauce, tossing with tongs to ensure they separate. Add the rest of the ingredients
  12. Turn off the heat and mix in the green onions.
Notes
Noodle choice: The fresh noodles I normally get from 99 ranch are really starchy, easily overcooked, and make a TON of noodles. 2 packages is a lot of noodles, so I would go down to 1 package next time. Be sure to boil a lot of water and set the heat on high before adding the noodles. Set the top on the pot and wait till steam comes out from the top, break up the noodles with tongs, then taste for doneness (do not cook for more than ~1 minute). Strain into a colander and rinse, tossing with tongs to ensure they don't stick. Add in a bit of sesame oil and toss again to ensure they don't stick.

Meat choice: I've never really liked lap cheong, then I started liking it, and now I'm back to not liking it. I do like spam in the fried noodles, but it is pretty salty. May want to get char siu from the 99 ranch  deli and try that next time.

Oil choice: Use peanut oil to stir fry everything, it makes a huge difference and imparts that special chinese restaurant taste to the noodles. Delish!
