T's Family's Texas Chili

Serves 6-8

Ingredients
5lbs leanest beef
3 (30 oz) cans small red beans (not chili or kidney beans)
5 medium onions, chopped
5 garlic cloves, smashed
5-6 Tbsp thyme
4-5 Tbsp ground cumin seed
10 Tbsp good quality chili powder
Salt to taste

Directions
In a large pot, over medium heat, add oil and brown meat; add onions and garlic. Break meat apart with wooden spoon. Add beans and juice, thyme, cumin, and chili powder. Add one can of water for each can of beans, keeping consistency thick at all times. Bring to a boil and reduce to simmer for 4-6 hours. Skim off the fat every hour. Taste often, adding more chili powder if desired.
