Fried Bread (Du Pain Frit)

1 Baguette, sliced into 1/4" diagonal slices
3/4 flour
2 Tbsp curry powder
1/2 tsp salt
Water until batter consistency 

Mix the flour, salt, and curry powder until well incorporated. Add in enough water until it reaches the consistency of paint, a thin batter. Coat the bread slices in the batter, shake off any excess and fry at 365-375 F, flipping halfway, until both sides are golden brown.

Note: if the bread is too dry or stale, mist with water. Also, use chopsticks to pick up the fried bread. This tastes better and less tough if you use fresh bread rather than stale bread but our family tends to use stale bread.

Salsa
1/3 large Onion, diced
1 Tbsp salt
~1/3 C Vinegar
4 Roma tomatoes, diced
1/4 bunch of Cilantro
1 tsp of sugar
Salt to taste

In a bowl, mix the onions with the salt and let sit for 5 minutes. Rinse the onions out then just barely cover the onions with vinegar and 1 tsp of sugar. Let sit for 10 minutes. Combine cilantro, onions & vinegar in food processor and pulse a few times. Add in diced tomatoes and pulse about 10 times until it reaches the consistency you like.

Yields: 3.5-4 cups of salsa
