Beef Burger with Kimchi, Fried Egg, Korean BBQ sauce, Miso Mayo and Cilantro

Ingredients
1/8 c soy sauce
1/4 C mayonnaise
1 1/2 tsp miso paste

2 1/4 lbs 80% lean ground beef
6 hamburger buns
Kimchi
6 eggs, sunny-side-up
Korean barbecue sauce
cilantro (optional)

Directions

  1. Make the miso mayo by reducing the 1/8 C soy sauce in a small sauce pan until reduced by 70% then let cool then whisk together with 1/4C mayo and 1.5 tsp miso.
  2. Divide the beef into 6 portions and place a round patty between 2 pieces of wax paper on a flat surface then gently compress the meat evenly to a 1/2" thickness with a cutting board.
  3. Cook each burger to medium. 
  4. Place each patty on the bun then drizzle with the BBQ sauce and the miso mayo, Top with kimchi and a sunny side up egg.
Notes
This was delicious, even for me. I had everything but left out the egg, but J ate it with the egg and really likes it.

Note: Original recipe calls for 1/4 C soy sauce, 1 C mayo, 3 Tbsp miso but that was waaaay too much and it was also nasty tasting by iteself (too much miso). I've cut it down to 1/4 of the recipe and reduced the miso paste by 1/4 of a Tbsp.
