Tamara's Ratatouille from Plenty

I made double the recipe, used chicken stock instead of water, didn't salt the eggplant prior, didn't peel the tomatoes (I did peel the potatoes but may skip peeling next time), cut into about 1/3" pieces, got a Anaheim? Pepper and a random red pepper marked "hot" at the farmers market. At the end the liquid didn't reduce enough because I doubled the recipe so I strained it with the spider and reduced the liquid over the stove in the Dutch oven until thickened. J helped prep so the prep was easy. 

This was really good! Loved it, best ratatouille.
