Puff pastry with cream and strawberries

Ingredients


  • Puff pastry sheet (DuFour)
  • Strawberries, thinly sliced or halved
  • Diplomat cream or whipped cream (2 Tbsp sugar, 1 cup heavy whipping cream)

Directions


  1. Preheat the oven to 400° F 
  2. Roll out the puff pastry and cut into long rectangles (ex. 2"x4")
  3. Dock the puff pastry with a fork then transfer to a silicone lined baking sheet. Place another baking sheet on top of it and bake for 15 minutes. Remove top baking sheet and continue baking until golden brown, 4-5 minutes. Remove from oven, transfer to cooling rack, and cool for 15 minutes
Option 1: whipped cream and jam
  1. Bottom layer: spread jam on one layer of pastry sheet then whipped cream then strawberries. 
  2. Second layer: Spread whipped cream on one layer of pastry sheet then strawberries
  3. Assemble: bottom layer, second layer, and top with one pastry sheet
Option 2: diplomat or pastry cream
  1. Bottom layer: Puff pastry, diplomat cream
  2. Second layer: puff pastry, diplomat cream, sliced strawberries, diplomat cream
  3. Top layer: puff pastry, diplomat cream, sliced strawberries
Refrigerate for 1 hour, but try to consume within the day
