Meat Jun

Ingredients

  • Steak marinade
  • 2lbs round steak, chuck steak, trip-tip steak, or flank steak
  • 2/3 cup brown sugar
  • 1 2-inch piece fresh ginger, peeled and grated
  • 2 garlic cloves, grated
  • 3 green onions, chopped
  • 1 cup shoyu
  • 1 tablespoon toasted sesame seed, ground
  • 1/4 cup sesame oil
  • 1 teaspoon freshly ground black pepper
  • For frying
  • 1 cup all-purpose flour
  • 5 large eggs
  • canola oil for frying
  • Dipping sauce
  • 60% Mirin
  • 40% Rice vinegar +
  • 10% Water
  • 1% Shoyu

Directions

  1. Freeze the meat for 20 minutes then thinly slice into 1/8 inch thick slices and pound or tenderize them with a meat mallet in all directions
  2. Whisk together marinade in a bowl and transfer to a ziplock bag along with the thinly sliced meat. Marinate for 1 to 8 hours
  3. Meanwhile, combine the dipping sauce ingredients into a small bowl.
  4. Place flour in a shallow plate and in a second shallow dish or bowl beat the eggs. 
  5. In a large skillet, heat 1/4-inch of oil over medium low heat
  6. Drain the meat, discarding the marinade. Working in batches, dredge the meat one at a time in the flour and then dip into the egg, letting the excess drip off before placing each piece in the skillet. Pan fry until golden brown, 1-2 minutes on each side.
