- Steak marinade
- 2lbs round steak, chuck steak, trip-tip steak, or flank steak
- 2/3 cup brown sugar
- 1 2-inch piece fresh ginger, peeled and grated
- 2 garlic cloves, grated
- 3 green onions, chopped
- 1 cup shoyu
- 1 tablespoon toasted sesame seed, ground
- 1/4 cup sesame oil
- 1 teaspoon freshly ground black pepper
- For frying
- 1 cup all-purpose flour
- 5 large eggs
- canola oil for frying
- Dipping sauce
- 60% Mirin
- 40% Rice vinegar +
- 10% Water
- 1% Shoyu
Directions
- Freeze the meat for 20 minutes then thinly slice into 1/8 inch thick slices and pound or tenderize them with a meat mallet in all directions
- Whisk together marinade in a bowl and transfer to a ziplock bag along with the thinly sliced meat. Marinate for 1 to 8 hours
- Meanwhile, combine the dipping sauce ingredients into a small bowl.
- Place flour in a shallow plate and in a second shallow dish or bowl beat the eggs.
- In a large skillet, heat 1/4-inch of oil over medium low heat
- Drain the meat, discarding the marinade. Working in batches, dredge the meat one at a time in the flour and then dip into the egg, letting the excess drip off before placing each piece in the skillet. Pan fry until golden brown, 1-2 minutes on each side.
