Almond Tofu

Almond float
  1. 1 envelope unflavored gelatin
  2. ½ C evaporated milk
  3. 1 ½ C water
  4. ½ C sugar
  5. 1 - 2 tsp almond extract

  • 3 envelopes unflavored gelatin
  • 1 ½ C evaporated milk
  • 4 ½ C water
  • 1 ½ C sugar
  • 1 - 2 Tbsp almond extract

Dissolve gelatin in a ¼ C cold water.  Heat 1¼ C water to almost boiling point.  Add hot water to gelatin mixture, stir until it is dissolved.  It may need to be reheated until the gelatin water becomes clear.  Add sugar and stir.  Add milk.  Cool completely.  Add almond extract.  Refrigerate to set.  Cut into cubes and serve with cold fruits.

Note: Make 3x the amount and have at least 2 cans of heavy syrup fruit.  I suggest 2 cans of mixed fruit in heavy corn syrup and 1 can of dragon fruit.  To get the almond tofu out of the container, soak the container in hot water from the tap for 30s and outline the tofu container with the knife.  Then try to dump it out onto a wet surface.
