Lentil Soup

Ingredients
Ham hock
Turkey Carcass (optional)
2 cups dry lentils
2 cups diced onions
1 cup diced celery
1 cup diced carrots
1 bay leaf
1 tsp dried thyme
1/2 tsp black pepper
1/2 tsp cayenne
1 quart chicken stock
1 quart beef broth
salt to taste
fresh parsley


Directions 
  1. Place ham hock & carcass in 1 quart of chicken & beef broth
  2. Add bay leaf, black pepper, cayenne, dry thyme.  Simmer covered for 1.5 hours
  3. Add in 2 cups onions, 1 C celery, 1 C carrots and simmer covered for 30 minutes.
  4. Add in 2 cups of lentils, simmer covered for 30 minutes.
  5. Take lid off and simmer for 20 minutes
