Minestrone soup

  1. Pre-heat oven to 250.  Cook beans for 75 minutes 
  2. Brown pancetta, add in onions, celery, carrot and saute for 5-8 minutes
  3. Add in garlic and cook for 1 minute
  4. Add in zucchini, cabbage and mix together
  5. Add in stock from beans, can of plum tomatoes / diced tomatoes, seasoning, parmesan rind and simmer for 40 minutes
  6. 2/3 cup of ditalini into pot, turn to medium-high.  15 minutes
  7. Stir in beans & done!
  8. Finish with extra virgin olive oil & parmesan

This is alright. Probably won't make again as it didn't stand out to me.
