- Pre-heat oven to 250. Cook beans for 75 minutes
- Brown pancetta, add in onions, celery, carrot and saute for 5-8 minutes
- Add in garlic and cook for 1 minute
- Add in zucchini, cabbage and mix together
- Add in stock from beans, can of plum tomatoes / diced tomatoes, seasoning, parmesan rind and simmer for 40 minutes
- 2/3 cup of ditalini into pot, turn to medium-high. 15 minutes
- Stir in beans & done!
- Finish with extra virgin olive oil & parmesan
