Egg Soup

Ingredients
1 large onion
1 lb ground pork
12 eggs
4 cups of chicken stock

Directions

  1. Brown onions then scoop out of pot
  2. Brown 1lb ground pork, season with salt/pepper
  3. Add onion back
  4. Scramble eggs, add a little bit of soup stock, season with a little salt (12 eggs - 1 c soup stock)
  5. Pour onto pork mixture
  6. Medium heat when it starts to set, make sure doesn't burn at bottom. Using a spatula, gently lift so it doesn't stick to bottom of pot.
  7. When sets, add rest of soup stock
  8. Serve with chopped green onions
Notes: Doubled the amount of eggs from 6 to 12.
