Ingredients

  • 1lb bag frozen coconut milk
  • 1/2 C sugar
  • 5 Tbsp corn starch
  • 3/4 C milk
Directions
  • In a small bowl (or measuring cup with milk in it), whisk together 3/4C milk and 5 Tbsp corn starch.
  • In a medium pot, combine frozen coconut milk with sugar over medium low heat. Bring to a boil and stir until the sugar is completely dissolved.
  • Slowly whisk in the corn starch mixture and bring to a boil over medium heat, stirring constantly.
  • Lower heat and continue stirring until the mixture becomes the consistency of pudding and is shiny.
  • Remove from heat and pour into an 8x8 or loaf pan. Use a 9x13 for double the recipe.
  • Place a piece of plastic wrap over the pudding and refrigerate till set (2-3 hours)
  • Cut into squares and serve.
Notes: I replaced the water with milk, but a lot of recipes just use water too. This was pretty good, J liked it. Will make again
