- 1lb bag frozen coconut milk
- 1/2 C sugar
- 5 Tbsp corn starch
- 3/4 C milk
Directions
- In a small bowl (or measuring cup with milk in it), whisk together 3/4C milk and 5 Tbsp corn starch.
- In a medium pot, combine frozen coconut milk with sugar over medium low heat. Bring to a boil and stir until the sugar is completely dissolved.
- Slowly whisk in the corn starch mixture and bring to a boil over medium heat, stirring constantly.
- Lower heat and continue stirring until the mixture becomes the consistency of pudding and is shiny.
- Remove from heat and pour into an 8x8 or loaf pan. Use a 9x13 for double the recipe.
- Place a piece of plastic wrap over the pudding and refrigerate till set (2-3 hours)
- Cut into squares and serve.
Notes: I replaced the water with milk, but a lot of recipes just use water too. This was pretty good, J liked it. Will make again
