Kenji's Gooey Apple Pie

Notes: The pie consistency was good, but 100g of sugar was too little for me. It tasted like it wasn't sweetened at all. Also, I used pastry flour but used too much butter so I'm not sure if the crust was good or not. It was tender, but not flaky? It was ok.

I had to break up the apples into 2 bags. Cooking it in the sous vide was kind of a pain. I think i'll just use his other recipe because putting the apples in 2 bags and weighing them down was super annoying.
